This season, I have been racking my brain on what to do with all of these wonderful fall vegetables and I realized, I did not have a great salmon recipe.
I mean, I have the basic lemon salmon recipe, but nothing that really stands out.
I decided to make a carrot top chimichurri grilled salmon with roasted fall vegetables.
And let me tell you the results were killer!
The carrot tops have a little bitter taste, but mixed with the chard and the sweetness of both the salmon and the vegetables, it sings.
Even B really loved it, he had 3 pieces. Which, in all honesty, is not that surprising, but really makes me proud.
