I’m feeling a little brunch-y today.
I mean, I am really craving eggs.

When a poached egg is done right, with all of that ooey gooey yolk, it is the perfect egg.
G really likes Eggs Benedict, so I wanted to try my hand at it.
I think I was very successful with my experimenting.
The egg is perfect runny, with a slight tang in the sauce from the lemon.
My stomach is growling just thinking about it!
I decided to make my version of an Egg Benedict, spiced it up with my cajun seasoning, added Canadian bacon, and best of all poached the egg to perfection.
